Asparagus with Herbed Goat Cheese & Steak and Arugula Sandwiches

Whew, that was a long title. But so worth it! We had a delicious dinner last night! The best part-it was super easy!

Without further adieu, the recipes!

Asparagus and Leek Soup
inspired by Giada 

WARNING: YOUR PEE WILL SMELL REALLY, REALLY, BAD

Ingredients:
2 tablespoons unsalted butter, at room temperature
2  leeks (white and light green part only), thinly sliced
4 cups low-sodium chicken broth 
2 bunches medium asparagus
a handful + a few leaves of chopped fresh basil leaves 
Goat Cheese
Kosher salt and freshly ground black pepper


Goat Cheese:
mix goat cheese and a few tablespoons of basil
add S&P to taste
set aside

 
Soup:
Heat butter over medium heat
saute leeks until soft
add all of the ingredients
taste, taste, taste, adjust seasonings
 bring to a boil
turn pot off
Blend until smooth
keep warm

serve with a dollop of goat cheese

Leftover Steak and Arugula Sandwiches
with Horseradish Sauce

Ingredients:
1 left over steak
2 sm Focaccia rolls, toasted
 Baby Arugula
Horseradish sauce, recipe follows

Spread sauce on both sides of rolls
add a layer of steak
top with arugula


Horseradish Sauce
1/4 cup mayo
1/4 cup Greek yogurt
1 tablespoon Dijon Mustard
1 tablespoon Whole Grain Mustard
2 tablespoons prepared horseradish
a splash of White Wine Vinegar
S&P to taste

mix all ingredients
that's it!

We Survived Our 1st Week & A Favor!

We did it! 
We survived our 1st week in Ohio!

It's quite a change but we both love it. We're just ready to move into 
our new house and get settled. It's hard living like this, ya know?



There is so much more to do here.


So far we've:
-Gone to a concert.
Darius Rucker
It was great. So glad to have a little bit of home up here!

 (and yes, he saw the SC flag that I was holding up:))


- Gone to a food truck and cart festival
SC is really missing out on these!
It was delicious. We tried almost every truck

-Gone to a GREAT architectural salvage store.
Girl can spend serious money in there!
Here are a few pics I took!

 Although there are no tobacco baskets like Scarlett's (don't think I'll find those around here), it is still filled with great pieces.
I should have taken more pictures. 
 O well, next time!

I can't wait to see what else this city has in store for us!

Eating From a Gold Spoon

The other day on Pinterest I came across this flatware and fell in love.
 Like head over heals in love. 



How freaking pretty is it? SUCH a GREAT alternative to silver flatware.
And lets face it, who doesn't want to eat off of a gold spoon? 

I think it would go so pretty with this everyday china.

I just love this china. I was introduced to it at Porter's while working there in high school. If you're in the area (Florence area that is- I keep forgetting), check it out! It's your one stop gift shop!

It's a porcelain china that is, are you ready? 
Dishwasher, microwave, oven and freezer safe. Yes, that's right! 

That's my kind of everyday china! 

It's going on my wish list...hint hint Rents:) 
(Mom, Gaga, Teri)

I haven't convinced Eric (yet) that he needs them for his birthday. 

Christmas is just around the corner though;)

Staring at Stairs

So the stairs/staircase in the new house need an overhaul. 


And this is what I'm thinking needs to happen

my plan is to DIY the nailheads



I know I want the face of the stairs and the bannister rails 
the wall color-it's an off white 
(will share sources later) 

What I can't decide is what I want the tops and railing to be

glossy black

or 

kendall charcoal

You see, you can see the staircase from the kitchen. I can't decide if I want to paint the bottom cabinets (or the island) kendall charcoal or not. 

Decisions, decisions... but that's another post!

Prayers



There are 2 different scenarios:


ONE:
Eric's prayers have been answered

TWO:
I need prayers to cope with living like this for month



I'm not exactly sure which one we're dealing with here.

Anyway, we packed up the house and moved it to a storage unit this past weekend. We then packed up our cars and made the long journey to Ohio. Let me tell you what a fun drive that was. I my car was so full that I could only see out of my window. It was scary to say the least. Thank you, UHaul for not renting trailors to Ford Explorer's (Eric and I both drive them). 
Thanks to you, I'm living in a man cave.

 Eric could not be any happier.

In other important news, I have INTERNET!!! WOO HOO! They man just came and set it up like literally 20 minutes ago! So ready to catch up on all of the posts I have missed. A girl can only see/read so much from a phone screen.
