Tradd Street Chicken Casserole

If you live and Florence and don't have this cookbook, you should. If you live anywhere and don't have this cookbook than you should. It's amazing. I haven't had a single thing out of it that's bad. The Florence Junior League put it together years ago and it's a staple in most kitchens around here.

So simple and so delicious! I think I will be keeping at least one on hand in the freezer from now on!

Tip: 
not sure how ya'll cut celery

I used to cut long pieces and then cut them into tiny piece
now I do it like this:

  2. OMG, would you believe I have the 1986 version of this cookbook--it was a gift to my grandmother many years ago from our cousin who lives in Florence! Caught my eye because it's so special to me and the cover is the same. Wow!

  3. I remember my mom and my aunt making this "way" back in the 70's. Too lazy to dig out the old recipe, I did a search and was happy to find it on here. Thank you for posting! One thing I vividly remembered, though, seemed to be missing: The casserole was always topped with very thinly sliced lemons. I also remembered there being a lot of butter in it. Sooo, I dug out the Ol' recipe tin and found it, on the original 3 x 5, in my mother's writing from the bygone days. Your recipe is very close, but there are some omissions that I highly recommend trying: Most especially the lemons slices covering the top of the casserole! Also, the veggies are sautéed in 6 Tablespoons of butter, and in addition to the cheddar, there is 1 cup of swiss/gruyere cheese (yes, I know, not the healthiest additions - but this was the 70's.)
    Give it a try, I don't think you'll be disappointed - it will bring this already good dish to a whole new level!
